The huge silver brew vats are rightfully front and center in the contemporary mosaic of wood, steel, and brick in this renovated downtown building. Local artwork graces the walls, and the aroma of artisan dishes of smoked gouda cheese soup and ribeye steaks floats through the hop-and- barley-infused air. Local author Cheryl Unruh, Kansas Explorer #2703, is a regular. She loves to watch the culinary team in the open kitchen prepare the pizza dough, tossing it high before slathering it with toppings and popping it into the wood-fired brick oven. A full bar features wonderful Bloody Marys, Moscow Mules, and martinis made with house-infused vodka. Sunday-Thursday 11 a.m.-10 p.m.; Friday-Saturday 11 a.m.-11 p.m.
